What's Up Wednesday: March 2021

Well, hello April. I cannot believe how fast the year is going but I’m here for it.
I haven’t shared one of these posts since December so figured I’d give some form of personal updates and catch you all up.

What we're eating this week:
This week we’ll probably stick to our usual go to’s unless I come across a new recipe to try. Some of our favorites are:
1) An easy chicken enchilada casserole recipe I make using canned chicken, a can of Rotel, a can of green chilis, onion & garlic - all sautéed together. I layer the corn tortillas sorta like you would a lasagna, alternative red enchilada sauce on the bottom, tortillas, the chicken mixture, cheese, then repeat. It’s a hit over here. I usually keep some of the chicken mixture off to the side for myself to eat with lettuce instead of eating the corn tortillas.
2) An easy beef sausage & pinto beans recipe that is a version of “beans & rice”. My recipe varies each time depending on what I have on hand but it’s always a hit. I make it in the slow cooker - slice up the sausage, add onions, and garlic, add a can of pinto beans, a can of diced tomatoes, Cajun seasoning, and some paprika. I set it on high for 3 hours and then to low for an hour - all depending on when I start making it. I’ve also made it on low for 5 hours or so. It doesn’t need that much time but as with all things in a slow cooker the flavors meld together the longer it’s in there. I usually eat it over cauliflower rice if I eat it at all (depends how strict I’m being with carbs).
3) An easy ground turkey hash. I sauté onions and garlic in olive oil, brown the ground turkey, add in seasonings (varies each time), and a can of diced potatoes. It’s easy and quick and satisfying. I made this a couple of weeks ago using: PC Herb & Onion seasoning + TJ’s Everything But The Leftovers seasoning + garlic powder, onion powder, and salt. It was DELICIOUS. I was just winging it and it turned out excellent.
4) Steaks are an easy meal for us around here and the hubby will season and grill them. Usually we have potatoes and a veggie with it.
5) We have been trying to use our PC Air Fryer as much as possible because it’s amazing, easy, and quick! While my mom is convalescing at our house post knee surgery, we’ve halted showing our house so we’ve kept the Air Fryer on the counter for convenience. We’ve made gluten free battered chicken in there and it’s amazing! I’ve used it to reheat pizza, make french fries, and I need to try it for other things. It’s so fast and it doesn’t heat up the kitchen like using our full sized oven does.
6) This lady is going to need her fix of queso and guac so we’ll probably get take out one night.
7) We tend to get a local Italian place every week to two weeks for their pizzas, Greek salad, and meatballs. Everyone raves about their food and the (Italian) owners are there every day sitting at a table. If you live in our area and haven’t checked out Angelo’s - you must give them a try!
What I'm reminiscing about:
Easters with my family growing up and through the years. I have the best family, truly. I miss our weekly gatherings and I miss seeing them for holidays. This past year with Covid put a fast stop to us hosting anything and I haven’t seen 95% of my family in over a year now. I miss their hugs, their quips, their laughs, and that feeling of HOME you get in your heart. We had to take a drastic step back from large gatherings because of the many stories on the news of super spreader events with large family gatherings and we couldn’t take the risk. Plus, we care for several elderly ladies and really had to make that a priority for safety. I am hoping we can all convene again soon and darn-it I need some serious family hugs.
What I'm loving:
Spring weather! I know we won’t have it for long enough so I truly try to appreciate the cool mornings and warm afternoons.
What we've been up to:
This past month was mainly focused on helping my mom after her knee replacement surgery with everything around the clock and driving her to physical therapy appointments three times a week. I’ve managed some work outs here and there, a few personal appointments, and lost many hours of sleep on a chair. LOL. But, it’s all worth it and she’s getting better and better! I can’t wait for her to be fully healed and able to do all the normal things again without knee pain.
What I'm dreading:
Mosquitos. I am not ready.
What I'm working on:
My blog! I am in a constant state of wavering between major enthusiasm and complete burnout. When I say constantly I mean I have thoughts of stopping off and on most days. Really it depends on how much “me” time I get and naturally this past (two) months has been a doozy.
My body! I wish I could report that I’ve been excellent at getting my stride back in eating healthy and exercising after the holidays but I’m a stress eater! =} I’ve also been taking more and more hormones and because of that I’ve had all kinds of side effects including bloating, weight gain (I refuse to step on the scale to validate that), headaches, nausea, and irritability. Sounds like a prescription commercial listing bad side effects, right? HA! Nonetheless, I am working on body acceptance, body positivity, and body awareness.
What I'm excited about:

What I'm watching/reading:
Watching: Ay yay yay - I haven’t had time to watch anything so if the TV is on (in the background for me) it is Hallmark or reruns of my fave old sitcoms.
Reading: I started a book in October called Autumn. I only read it when I’m running on the treadmill. I have yet to finish it because life took some twists that halted my energy, then the holidays, and then life some more. But, I am reading a chapter or two as I run again and still really like the book. It’s like a fall Hallmark movie. Easy reading, you feel like it’s autumn outside, and you pretty much can guess the ending. That’s my kind of easy reading.
What I'm listening to:
Currently, this CURE album.
I have managed to listen to a few Hope City sermons lately and gosh I sure miss my former church. I always hear something that makes me stop and take notes.

What I'm doing this weekend:
Nothing major planned, mostly working around the house and keeping an eye on my mom and her progress with her knee recovery. I’m hoping to sleep in if possible, catch up on life, and celebrate JESUS being raised from the dead. Hallelujah - HE IS RISEN!
What I'm looking forward to next month:
One of my bestie’s first baby is due this month! I can’t wait to meet the little guy. All the feels and all the heart eyes over here! I am counting down the days!
The hubs and I will celebrate our 3rd anniversary this month. It feels like a lifetime ago that we got married!
