Whole 30 Everything Bagel - Cauliflower Rolls
Monday is here again and we're kicking off the week with a healthy recipe before we take Lorenzo to the vet and then I pack my bags for a trip to Tennessee. I get to see my family this week as well as celebrate a friend's bachelorette weekend. I'm excited for the trip but know I will miss the hubs and my little bunny, Lorenzo.
I finally tried this recipe I found on PureWow.com in 2017 and the darn thing has been on the top of my to-try recipe stack since then. FINALLY, I tried it. And it's pretty good! Of course, Trader Joe's Everything But the Bagel spice is so fabulous on most anything anyway. But, these healthy rolls are nice substitute for bread. No, the texture isn't the same as a true dinner roll. But, when you're choosing a health(ier) lifestyle you're able to overlook and accept that some things will never be a true replacement and just enjoy it for what it is. Your body will thank you.
Shopping List
- 1 head of cauliflower, riced
- 1/3 cup almond flour
- 1 tbsp garlic powder
- 1/2 tsp sea salt
- 3 large eggs, whisked
- Everything but the Bagel spice
Directions:
Preheat the oven to 400*F. Line a baking sheet with parchment paper and spray the paper with olive oil or coconut oil non-stick spray.
Mix the riced cauliflower with the dry ingredients. Add in the whisked eggs and mix well. Divide the mixture by 8 and roll it into a ball. I simply used a measuring cup to scoop and drop the mixture onto the pan. Sprinkle each roll with a heaping amount of Everything but the Bagel spice, then bake for 35-40 minutes until golden brown along the bottoms. I had to take mine out early so keep an eye on them as each oven varies.
