Want to know something crazy?? This post right here (originally shared in Jan. 2018) has been my #1 most popular blog post ever. As of today when I’m writing this it has had over 1,000 hits in the past 30 days alone and it is also my most popular pin on Pinterest with thousands and thousands of pins. It’s nuts!
Grant it, I love this recipe and it’s 100% healthy so I am not surprised that people like it. And I have received countless comments of great feedback both on the blog and on Pinterest.
It just goes to show you that you never know what readers will like or what people will search on Google. There’s always content that I share that I think will be a major hit but then there isn’t any traction/comments/or pinning. Yet, something so simple like this recipe is floating and being saved over and over.
SO - because of that, I thought I’d share the magic again.
This is Whole 30 and Paleo friendly. The flavor reminds me of eating spinach artichoke dip...without the chips and without the guilt. 100% healthy. Seriously. Imagine it. Spinach artichoke dip with your chicken. #yesplease
Shopping List
- 2 boneless skinless chicken breast
- salt and pepper
- 1.5 tbsp olive oil, divided
- 3 garlic cloves
- 1 tbsp almond flour
- 1 cup fresh spinach, chopped if preferred
- 3-4 oz canned artichoke hearts, sliced
- 1 1/4 cup whole coconut milk
- red pepper flakes (optional)
Directions:
Heat 1 tbsp olive oil in a non-stick pan on medium high heat. Season both sides of the chicken with salt and pepper. Add the chicken to the pan to sear it until golden brown, about 4-5 minutes. Flip the chicken to sear the other side. Transfer the chicken to a separate plate and cover to keep it warm.
Add the remaining olive oil to the pan with the minced garlic. Add in the spinach and artichoke to saute until the spinach has wilted. Pour in the coconut milk and 1 tbsp almond flour. Stir it in well, scrapping up any browned pieces from the bottom of the pan. Season with salt and pepper to taste preference. Once the mixture is simmering and thickened, add the chicken back to the pan. Sprinkle with red pepper flakes before serving warm.
This dish was excellent alone, without any rice or pasta. You can serve this with riced cauliflower, or if not following Whole 30 or Paleo then with steamed rice or pasta.
