Pumpkin Alfredo Sauce - Paleo, Vegan, & Gluten Free

Good Morning, everyone! I hope you woke up feeling good and refreshed this morning.
I thought I’d share a super easy, super quick, and super healthy recipe with you that is honing in on ALL the fall feels with pumpkin.
I was excited to give this recipe a try when I saw it, but I knew I didn’t want to make it using the original ingredients such as heavy cream, cheese, and butter. So, I jotted down replacements I knew I could use as substitutes to make it Paleo, Vegan, and gluten free.
Let me tell you, it did not disappoint me. In fact, I quite literally inhaled my dinner and had to refrain from getting seconds.
So, are you ready for this PUMPKIN ALFREDO SAUCE?
Shopping List
- 1 package of Miracle Noodles (or Zoodles/zucchini noodles)
- 3/4 of a 13.5oz can organic pumpkin puree
- 3/4 of a 13.5oz can organic coconut milk
- 2 tbsp coconut oil
- 5 garlic cloves - minced
- 1/2 cup nutritional yeast
- 1/2 tsp sea salt (or more to taste)
Before we get started I want to note that the package of Miracle Noodles is really a serving for one. The sauce makes 4-6 servings, so I had leftover sauce!
Instructions:
Heat 2 tbsp coconut oil in a sauce pan over medium heat. Add the minced garlic and sauté until soft ~ about 3 minutes.
Add in the pumpkin and coconut milk. (I used 3/4 of the can at room temperature.) Simmer until slightly thickened, about 5 minutes.
Add the nutritional yeast and salt; and whisk to combine. Let it simmer a few more minutes.
While the sauce is simmering, rinse the Miracle Noodles in a colander and sauté per the package instructions.
Serve and enjoy!
Note - this sauce would make an excellent soup, would be delicious served over rice/cauliflower rice, and it would also be tasty served mixed with chicken as well. I’m going to try that myself!

I hope you enjoy this recipe because I sure did! When I make it again, because I most certainly will, I will probably add a dash of garlic powder and Italian seasoning to it as well. I enjoyed it as is, but may play with the ingredients just a bit.
