Almost Paleo Peppermint & Chocolate Chip Cookies (Gluten Free)

Ooooo weeee! I snagged these peppermint chips when our neighborhood Randall’s was closing and just figured I’d figure out a use for them later. Well, that time is now. Christmas is here. Peppermint is acceptable and desired. Cookies have ZERO calories this month. RIGHT?!?!
So, on to the recipe I created!
Shopping List
- 2 cups blanched almond flour
- 1/2 tsp baking soda
- 3 large eggs, beaten
- 1 tbsp vanilla
- 1/2 cup monk fruit sweetener
- 1/2 tsp cinnamon
- 1/4 cup Enjoy Life mini chocolate chips
- 1/4 cup peppermint chips
Preheat your oven to 350* F
In a medium (or large) mixing all ingredients together (except the peppermint and chocolate chips)
Once thoroughly combined, add in the peppermint and chocolate chips and mix thoroughly
In a small bowl, mix together 1/2 tbsp cinnamon and remaining monk fruit sweetener.
Using a small cookie scoop, scoop cookie dough and place on a parchment lined cookie sheet. I made 19, but total cookies may vary depending upon scooper.
Bake for 15 minutes or until done.
These are soft and not very sweet. The pop of sweetness comes from the peppermint and chocolate chips but otherwise is not a sweet cookie.
PS - we ate these and the snickerdoodle cookies (I’ll be sharing soon on the blog) for breakfast this morning with our coffee and the hubs said all he needs every day are these cookies for breakfast and he’s happy. =)))
